It is often found on rockeries as it is more decorative than culinary. Woolly thyme is not really grown as a culinary variety but is an excellent herb for brightening up a herb garden as edging or as a feature plant, it is extensively used as a path thyme between flag stones and within turf. Being a native of the Mediterranean it needs a place in full sun. Thyme likes a well-drained light soil, and it should not be too rich in nutrients as this will only encourage the plant to grow 'leggy' and lose its compact shape, also ensure that the plant is cut back after flowering again to help maintain shape. It will produce pink flowers in summer but it is the woolly leaves that are the reason for growing this variety. Try planting between pavers so when walked on or brushed past it will release its scent. Woolly Thyme as the name suggests has hairy leaves and reaches a height of 5cm the grey-green woolly leaves form an evergreen mat so it is suitable for planting in the rock garden, herb garden or the front of a border it will also make a very good container plant as it has a natural trailing habit. It is drought tolerant - an overall easy-care plant. This cute little ground cover is just 3 inches tall. It grows slowly and can die out in patches if watering is not even. Drainage should be excellent and, in our area, watering regularly is a must. We have had some success with growing Woolly Thyme in partial shade in our hot summer climates. Other thymes we like to use in between stepping stones are Annie Hall Thyme, Elfin Thyme, Highland Cream Thyme, Leprechaun Thyme, Mint Thyme, Pink Chintz Thyme and White Moss Thyme. Woolly Thyme is really better suited for growing in smaller spaces like in between flagstones. The dark green thyme behind it is the fast growing Pink Lemonade Thyme, which three years later completely took over by the less aggressive Woolly Thyme. Here Woolly Thyme (next to the gray boards) densely covers the ground. It is the grayest of all the thymes and should not be confused with the prolific bloomer and greener leaved Hall’s Woolly Thyme. It rarely flowers which makes it a good choice for those allergic to bees. Tightly knit, it makes a great filler for in between pavers or along borders.
